This article describes how to record wastage of items that have not been keyed through the till, for example kitchen ingredients that were past their due date, or a bottle of spirit that was dropped.
If you want to record products that have already been sold as wastage (such as an incorrect drink served) you can do so by voiding the item on the EPOS.
You can record an item as wastage from the bar orders and kitchen orders screens. Any item recorded as wastage from the bar orders screen will be allocated to the bar, and any recorded on the kitchen screen will be allocated to the kitchen.
This means it is possible to record a drink as wastage against the kitchen (e.g. a bottle of wine used for food) or vice versa if needed.
To record an item as wastage, press the 'waste' icon in the top right corner of the bar or kitchen orders screen.
Then start typing the name of the product (which can be an ingredient).
You will see a list of products that match your search. Select the product you need to record wastage for and specify the quantity you need to waste.
You can specify this in either order unit e.g. bottle, bag or measurement unit e.g. ml, grams.
Once you've specified the quantity, press 'SUBMIT' and select a reason for the wastage.
You can add and amend wastage reasons on the EPOS tab of the set up module on your back office.
You will see the wastage on the voids & refunds report.
